Yesterday I spent about 3 hours cooking and eating, with 2 hours of shopping on top of that. Most of my time was devoted to making an onerous cucumber soup (which involved juicing 4 cucumbers with a very unhelpful cheesecloth), which I will complete tonight. I’ll let you know how that goes; the recipe is from Cooking Light.
I also made this simple salmon with lemon, dill, garlic, salt and pepper from Allrecipes. I lightened up on the butter, garlic, and lemon but it was still quite a bit of butter. Delicious, though!
If you’re in the Boston area, you probably already know that I’m organizing cooking parties that I’m calling “Pecha Kuchen,” riffing off of the trendy Pecha Kucha. Instead of sharing ideas and presentations, we’ll be sharing really great food with the intention of having leftovers to eat during the week. So bringing Tupperware is almost as important as bringing food.
The first one is tonight, with fingers crossed that a thunderstorm won’t attack the culinary celebration. If you want to come but don’t have the sufficient kitchen space or cooking tools, you are welcome to come over early and use mine - just let me know beforehand. There will be delicious food, interesting people, (hopefully) copious leftovers to tide you over until 4th of July weekend!
